V175 SO Snapshot override Ord Qty for Non Physical item

Hi, Is there any way to override the SOLine.QuantityOrdered on a snapshot even if it is greater than the original snapshots SOLine.QuantityOrdered ?
This is for a Non physical item to record a levy on certain stock items delivered per snapshot.

I can't seem to find anyway to override the original SOLine.QuantityOrdered so I can get a NEW SOLIne.QuantityThisDelivery.
