On JiwaFinancials.Jiwa.JiwaDebtors.ContactName there is a default DefaultContact property how is set through the user interface?

It appears you cannot. In v6 you could via the Contacts form.

Yes. It looks like the code will read and save the value. So if you set the property, then save the debtor you should be all good. You can check by looking in the CN_Contact table.
